AI-Powered Nutritional Data Extraction from Scientific Literature
Agriculture and Agri-Food Canada has developed an artificial intelligence system to automatically extract and analyze nutritional data from scientific research papers. This system focuses on identifying amino acid composition information and calculating amino acid digestibility scores based on established reference patterns. The extracted data is then presented in easy-to-understand summary tables and graphs that highlight limiting amino acids.
This system is currently in development and is designed for use by Government of Canada employees who conduct nutritional research and analysis. The system does not involve processing personal information—it only analyzes published scientific literature. By automating the extraction and interpretation of complex nutritional data, the system helps researchers work more efficiently and ensures consistent analysis across large volumes of scientific publications.
